Let me be clear, the FDA does NOT recommend canning eggs in any way shape or form! This includes pickled eggs. This recipe I share with you today is considered “rebel canning”, I am in no way responsible for any food you make or consume from recipes I share. What is the probability or risk of getting botulism?

  • On average, in the USA, there are 23 cases of botulism per year.

  • Millions of homemade pickled eggs are consumed each year.

  • There has only been only 1 reported case of botulism caused by home pickled eggs, back in 1997.

If you do choose to can your eggs and keep them in your pantry, you should keep them as cool as possible and out of direct sunlight for optimal storage, just as with all home canned foods!
